Grouper Rolls with Mushrooms and Chinese yams Ingredients
grouper 120g, oyster mushrooms 20g, red pepper 10g, yellow pepper 10g, purple onion 15g, enoki mushrooms 15g, ginger slice 2-3, cream 30cc, leek flower 2, Chinese yam (white / purple) 60g, minced chive 5g.
Salt, pepper some, fish stock, 100cc, white wine 15cc.
  1. Remove the grouper meat and cut into thick slices.
  2. Shred the oyster mushrooms, red peppers, yellow peppers, purple onions and Chinese yam. Wrap them with the fish slices.
  3. Tie them well with the blanched leeks and steam until cooked. Or cook over the low heat.
  4. Add the white wine and cream into fish stock to cook the sauce. Add the minced chives before removing the pot from the heat.
  5. Place the fish rolls on the plate center. Garnish with leeks, red and yallow pepper dice on the plate edge. Spread over the sauce.
