Pickled Water Melon California Sea Bass Source
Fish Dishes for the Lunar New Year Dinner in the Year of Dragon
Major ingredient: 1 whole California sea bass (600 gram)

Secondary ingredients: 50 grams pickled water melon (can be replaced with pickled turnip), 5 mashed garlic cloves, 2 chopped spring onions
A small amount of Salt, 1 tablespoon rice wine, 1 teaspoon white vinegar, 1 tablespoon sesame oil, 200 grams water
  1. Pan-fry the sea bass to medium well (keep the fish in shape).
  2. Stir-fry the mashed garlic. Add the pickled watermelon, rice wine, salt, vinegar, and water inside and cook for about 10 minutes. Put everything, including the juice, in the plate.
  3. Put the chopped spring onions on the fish and pour hot sesame oil on the chopped spring onions.
  4. Set the upper heat the oven to about 200°C and lower heat to 150°C. Bake for about 10 minutes. Prepare for serving.

Cooking tip:
The sour taste of pickles can highlight the fresh taste and remove the fish smell of the sea bass. You can also add some lemon juice inside.
