Fish Dishes for the Lunar New Year Dinner in the Year of Dragon
Main ingredient: 600 grams cubed milkfish marinated with diluted white vinegar (to soften the fishbone).
Secondary ingredients: 3 spring onions, 2 cinnamon slices (about 20 grams), 3 star anises
100 grams soy sauce, 100 grams sugar, 1 tablespoon tomato sauce, 1 tablespoon white vinegar, 350 grams water
  1. Fry the marinated milkfish cubes to crispy at low heat to carbonize fishbone. Add spring onion inside for the burnt smell.
  2. Cook the main and secondary ingredients with the seasonings in the same pot for about 10 minutes.
  3. Drip the juice and remove the secondary ingredients. Leave the milkfish cubes only.
  4. Put the milkfish cubes on the plate. Heat the sauce at high heat until it reduces. Pour sauce on top before serving.

Cooking tip:
When cooking fish with a lot of bones, fry the fish at low heat to calcify fishbones.
