|Fish Dishes for the Lunar New Year Dinner in the Year of Dragon
600 grams cubed milkfish marinated with diluted white vinegar (to soften the fishbone).
3 spring onions,
2 cinnamon slices (about 20 grams),
3 star anises
|100 grams soy sauce,
100 grams sugar,
1 tablespoon white vinegar,
350 grams water
- Fry the marinated milkfish cubes to crispy at low heat to carbonize fishbone. Add spring onion inside for the burnt smell.
- Cook the main and secondary ingredients with the seasonings in the same pot for about 10 minutes.
- Drip the juice and remove the secondary ingredients. Leave the milkfish cubes only.
- Put the milkfish cubes on the plate. Heat the sauce at high heat until it reduces. Pour sauce on top before serving.
When cooking fish with a lot of bones, fry the fish at low heat to calcify fishbones.
