|Fish Dishes for the Lunar New Year Dinner in the Year of Dragon
Golden pomfrets marinated in spring onions and ginger juice for 3 hours (blend spring onions and ginger with rice wine and white pepper powder water)
Secondary ingredients:Smoke stuffing
1 part white rice,
1 part tealeaf,
1 part sugar,
1 part flour
- Add vegetable oil to 70% in a frying pan and heat to 160°C.
- Marinate the prepared golden pomfret in the oil for 10 minutes for aging. Repeat this step twice to ensure the fish is well done.
- Use another pan and put a tin foil on top. Add the smoke stuffing on the tin foil, put a grill on top, put the golden pomfret on the grill, and cover the pan.
- Turn to low heat to let the smoke begin. After 3-5 minutes, put the fish in the plate for serving.
Make some cuts on the fish or cube the fish for smoking to reduce the smoking time and maintain meat elasticity.
