||This project will establish standard operating procedures and specifications of mullet roe, develop quality indicators, and set up the standard qualities of product preservation. The establishment of standard treatments of cultured mullet by different aquaculture sources, different taking the roes ways, different pickled time and different drying methods, including the sun drying, the cold wind drying and combination both of them, to detect the changes of pickled mullet roes during freezing and refrigerating. What’s more, we detect the changes of quantities, including residues of drugs, heavy metals, estrogen, total plate counts, Escherichia coli (group), volatile basic nitrogen, amines, biogenic amine, to realize the qualities between different sources of raw materials and different processing methods. By detecting the changes of the water activity, total plate counts, Escherichia coli (group), volatile basic nitrogen, amines, types of biogenic amines, the degree of oxidation to understand the degrees processing influence the products quality, and establish safe standards manufacturing processing, and the qualities of products stability. Through using the standard operating practices to control the raw materials, products managements and products preservation system, and establish a standard manufacturing process and production specifications.
